KAI 由 95% Carmenere 與 5% Petit Verdot 混釀而成,葡萄以清晨手工採收,經雙重挑選、去梗、輕壓後,以重力方式送入不鏽鋼槽及 10,000 公升橡木桶中發酵,溫度控制在 24 至 28°C。Carmenere 浸皮時間達 20 至 30 天,Petit Verdot 則約 16 天;其後酒液在法國橡木桶中陳釀 22 個月,其中 47% 為新桶,令酒體更具層次與深度 。
酒色呈吸引人的紫紅色,香氣以黑胡椒、紅椒粉、淡雅花香為主,並帶有黑巧克力與甜香料的桶陳氣息。口感清新優雅,帶有胡椒、丁香與黑果風味,並隱約透出一絲無花果般的甜感,單寧柔滑而細緻,結構緊緻,餘韻悠長,具備極佳陳年潛力 。
Errazuriz Kai 2012 is Viña Errázuriz’s most sophisticated Carmenere, sourced from selected plots in the MAX V vineyard in the Aconcagua Valley, about 60 km from the Pacific Ocean. The vineyard benefits from a Mediterranean climate, with warm summer days and cool evening breezes from the ocean, helping the grapes retain freshness and balance.
MAX V sits on the south bank of the Aconcagua River on an alluvial plain, making it cooler than MAX I and MAX II thanks to its proximity to the river, minimal slope, and lack of north exposure. The soils are deep, ranging from clay to clay loam, with stone content reaching up to 80%, ensuring excellent drainage, while the subsoil is a coarse-grained alluvial terrace rich in rounded pebbles.
The 2011–2012 season was warm and dry, with moderate yields. Temperatures rose notably in February and March, reaching a March average of 30.8°C, while rainfall was only 2.4 mm, resulting in exceptionally healthy grapes. These conditions produced wines with deep color, soft tannins, ripe fruit, and moderate acidity, while Carmenere contributed spice and structure and Petit Verdot added color, tannic backbone, and red-fruit spice.
KAI is blended from 95% Carmenere and 5% Petit Verdot. The grapes are hand-harvested in the cool morning hours, double-sorted, destemmed, gently crushed, and then gravity-fed into stainless steel tanks and 10,000-liter oak casks for fermentation at 24 to 28°C. Carmenere spends 20 to 30 days on skin, while Petit Verdot macerates for around 16 days. The wine is then aged for 22 months in French oak barrels, 47% new, adding depth, texture, and complexity.
It shows an attractive purple-red color, with a spicy bouquet dominated by black pepper, notes of paprika and subtle floral touches, framed by bitter-sweet chocolate and sweet spice from oak aging. On the palate, it is fresh and elegant, with flavors of pepper, clove, black fruits, and a faint fig-like sweetness. The texture is soft yet firm, with silky tannins, lively acidity, and excellent ageing potential.
